In his role as Director of Culinary, Moritz Neumann overlooks the culinary operation of 12 restaurants & bars at JW Marriott Marquis Hotel, Dubai. The award-winning Tong Thai, Prime68, Izakaya, La Farine, Vault, Positano, Aqua, The Lounge, Bridgewater Tavern, Cafe Artois, Kitchen6 are among the venues, he oversees. 

Moritz brings with him experience spanning over two decades working across seven different brands within the Marriott portfolio. Previous accolades include the group’s Rising Star award and another Rising Star award for the Renaissance brand. 

After a career that has taken him across five different countries, he has settled in Dubai, looking after a team of 250 chefs and 17 kitchens. A true believer in leading by example, Neumann has a track record of remarkable performance on all audits, assessments and consistently delivered creative initiatives to inspire his team and attract new customers to the hotel. 

Under his leadership, food costs dropped significantly as a result of his menu engineering and strong relationships with purchasing managers and cost controllers. At the same time, he has helped to increase the hotel’s food revenue in various outlets, which are having their best year since the opening eight years ago. 

His menus, dishes, and food quality have led the hotel to continue to achieve key awards and recognition in the industry and be renowned as The Destination of Exceptional Taste.

Moritz earned his technical degree in Culinary Arts from the distinguished Munich Business School, Germany.
